So I made this awesome Banana Bread using some bananas that I had frozen after having gone brown and mushy. It’s that little irk of mine, brown mushy bananas, but they are perfect for baking!
Baking time: approx. 45-50 minutes
4 oz Butter
1 cup brown sugar
1 Tblsp vanilla extract
2 eggs
2 cups flour
1 tsp baking powder
½ tsp baking soda
1 cup choc chips
1 cup chopped hazelnuts
3-4 ripened bananas
Pinch salt
1. Pre-heat oven at 180c and grease a tin baking pan approx. 11/21cm
2. Cream butter and sugar. Combine in the vanilla extract, eggs and bananas…
3. Add in dry ingredients, portioned, until creamy and combined
4. Stir in chocolate and hazelnuts
5. Bake for 45mins and test with skewer…may need another 6 minutes depending on heat of oven
